Sweet Potato Pie

Ingredients:
1 1/2 cups of mashed sweet potatoes
1 stick of butter, melted
1 1/2 cups of sugar
3 Tbsp flour
2 eggs
2/3 cup of evaporated milk
1 tsp lemon extract
1 tsp vanilla

Boil sweet potatoes until tender - mash & blend with a hand mixer
Combine all ingredients & pour into a 9" unbaked pie shell
Bake at 375º for 45 minutes, check with a silver knife
